Roll out thinly the puff pastry, brush with egg and bake in the oven. Cut into rectangles and put aside.
Crumble the curd cheese with the olive oil and the herbs.
Open up the puff pastry rectangles, fill with the cheese and slices of presunto ham and cover with the other part as a lid.
Serve, dressed with vinaigrette.
Serve with a vinho verde made with the Loureiro variety of grapes. The intense aroma of floral nuances in this variety together with a quite high acidity give it the perfect crispness to accompany this dish.
